My Crazy Sexy Life

I love this recipe, it's my go-to fast food. Buddha bowls are basically veggie scrap bowls with grain, seasoning and avocado. They're an awesome way to use up all your RAW green pals before they go bad. Since I eat cooked foods at night this recipe is one of our regular dinner options. Plop ANY combo of veggies (finally chopped - this is key) AND avocado on top of an alkaline grain. Yum!

Here are some examples:

Millet or Quinoa (both quick to cook and great for you!)

Any combo of veggies......
Broccoli or cauliflower (cut in tiny florets)
Finally chopped greens (kale, romaine, arugula, spinach, etc)
onion or scallions
grated carrot
chopped celery
1-2 cloves of fresh garlic
Ground flax seeds
1-1.5 avocados (for 2 people)
Olive oil or flax oil to dress (1-2 tsp)
Sea Salt or braggs
dash of cayenne

Those are just some examples, use what you've got, what you like etc. If you have fresh herbs great! Finely chopped basil or dill makes a buddha bowl tres tres...

Thank you for sharing this, Kris! These kinds of ideas are EXACTLY what I need. Last night I had Buddha bowlish concoction, but with soba noodles. I topped them with asparagus and broccoli that I'd sauteed quickly in garlic and coconut oil and tamari.

Question: Do you cook your veggie scraps? If they're cut up all small like that, there's probably no need . . .

Hey, i love quinoa too! I buy it at Trader Joe's, they have a nice organic box! And not expensive at all!!! Kris, your buddha bowl sounds awesome! And so easy and quick! I think quick is the key word because we are all so busy and this takes, what minutes to prepare? Do you ever eat bulgar? Do you have a recipes for a quick veggie burger maybe using the bulgar or quinoa as a base? I guess you can pretty much use anything in a veggie burger right? Experimentation is fun!!! :O) Thanks Kris!

Kris thanks mucho for the great idea! Just last night I went bowling with some work pals, got home at 8:30 and thought, ugh, I don't want to spend all this time preparing something and eat at 10pm! This is totally what I was looking for, esp since I also thought, hmm, how much longer can I keep this broccoli?? Thanks for all of your great raw receipes (like the salad dressing post), Im a newbie so I need these ideas!
btw, not that you haven't been told a lot already, but holy spicoli YOU ROCK!

There isn't a Trader Joe's anywhere near FL. Anyone have any ideas where I could find Quinoa?

Whole Foods, even your local grocery store might have it in the 'ethnic' foods aisle or the 'natural' food aisle.
