I got this off of goneraw.com.. an incredible recipe resource. It was posted by Kandance.
I made these for my raw food/bday party for Kat and Denise party and they were super good! You do need a dehydrator.. it may work without if you freeze them.. but I have not tried that yet.
Lemon Cookies
Makes about 24 small cookies
1 cup soaked raw cashews (soak in pure water for 4 hours then rinse and drain)
zest of one organic lemon
1/2 c. fresh lemon juice (took 2 lemons)
1 c. dry shredded coconut (get at Whole foods)
1/4 c agave nectar (raw honey would rock in these too!)
Prep:
1. Process cashews in food processor until they form a paste consistency.
2. Mix in all other ingredients.
3. Put one tablespoon of cookie dough unto dehydrator trays. (don't use the teflex ones!)
4. Dehydrate for about 12 hours at 105 degrees or 8 hours at 115 degrees, comes out about the same.
5. Enjoy these tart and sweet treats!
The only person I heard that from is Bryan Au on give it to me raw.. not sure if it is accurate. I kinda figure we all need a treat sometimes and not eat the whole batch alone!! That said, you could probably sub pine nuts or brazil nuts it would just taste a bit different.. but thats the fun of it isn't it!?

Rhonda honey, I am not sure... but like peanuts perhaps they grow toxins?? lots of raw food books use them... got to do some more research. I know that most all cashews are not truly raw as they have to heat them to get them out of their shell. I try not to stress too much.. my diet is so simple that a few toxins won't get me down!

I had heard this from Dr. Robert O Young. The idea is similar to the micro-toxins in peanuts. And yeah I know lots of raw foodies use them. And I think Gabriel Cousins mentions it as well. I think there is the possibility that while some things in raw food, like these possible micro-toxins, dates (high-glycemic), may not be such a problem for healthy folks, it has the potential for more negative impact for those with cancer, given the general toxic load & concerns about sugar relative to cancer.
Thanks for the info. I do steer clear of peanuts as they can be an irritant/inflamatory in over use, and the toxins etc. I also steer clear of mushrooms at the moment (not forever) per Cousens research.
Regarding dates. I use one or maybe two in a dressing or sauce for the whole meal/family. I think if we sat down to a major meal of dates it would be bad, but a big glass of OJ is all sugar too. It's a moderation thing and limiting the sugar is a good thing overall. I asked the complementary doc at MD Anderson a question about orange juice and wouldn't it be better to eat the whole orange. He said yes, but it's important to get 4 oz of orange juice. I never drink OJ or sugary juices, but he had some research on specifically orange juice. I will try to get it and spread the info around. I haven't purchased any OJ, but maybe tomorrow, not likely, but hey.
Sure, you're welcome. On dates, OJ, etc. I try to stay under 50 on the glycemic index & a low glycemic load. A lot of times you can substitute agave for dates, unless the stickiness/bindiness of the dates is needed. I find also that a lot of times if I do have a recipe that calls for dates, I can reduce the amount & be fine with the taste, since I keep the sugar low. And when a dressing has a date in it, so the amount per serving isn't too bad, then sometimes....but in general I try to avoid using dates, especially as I find if I inch forward towards more sweet stuff, it's a lot easier to go a mile in no time flat, & hardly even realize it, if ya know what I mean!
