It can be done and it is way easier than it sounds... I love sunflower seed cheese, or mockzarella (macadamia), it really really really fills in the cheese gap!!
Funny, I was going to recommend Breaking the Food Seduction as well. It talks all about how milk is addictive and evolutionarily designed to be that way, so that the baby cow would stay near the mother and not wander off into the woods.
I was totally addicted to milk and cheese. I didn't eat meat so I doubled up on dairy (maybe tripled some days). Influenced by Dr. T. Colin Campbell and the China Study, I stopped eating dairy and had much better digestion and got rid of my allergies. I don't feel addicted anymore, it just took a while.
Some things I learned were:
-Soy cheese is often terrible and often contains casein, a milk protein
-Earth Balance is a great butter substitute, if you need one
-Eden Soy, Rice/Soy Blend is sweetened with amasake not sugar or syrup
-Tahini, lemon, scallions, and water make a super creamy salad dressing (great raw option)

How about cutting out one dairy product at a time? Like switch to yogurt instead of ice cream, etc. Try the butter substitutes, almond milk is yummy, or even the rice cheeses are good! At least if you are eating/drinking dairy, try cutting your amounts way back and going with the healthiest, organic stuff that you can. Good luck!
In the "Dairy" section of the health food store (although some regular grocery stores carry it too) You can get it shredded or in slices. I don't recommend the rice "butter" though - I thought it was just weird! You have to be careful and read ingredients, just in case you are avoiding other things: casein, soy, etc.
I totally appreciate what you all have said here - and the advice you have offered...just a quick question - does anyone have any suggestions for "yogurt"? I have tried several different brands of soy yogurt, but have still not found one I really enjoy. Thanks so much!
You are so right about soy - it is a big fat loser. Steer clear of it.
Once I read about all the bad things that dairy does in our body (mucous forming), I found it quite easy to abandon. And I ate dairy EVERY DAY. I no longer experience (chronic) sinus issues and I feel it is a direct result of eliminating the dairy products. It reportedly causes issues with digestion as well - no problem on that end either!!!!
