i've been a vegetarian for 10 years now - maybe 11 - and have tried to go vegan several times. i'm not upset by these failed attempts, they've taught me much, but i would really like to make my next go at it the successful one. does anyone have any advice or tips for me? i've already phased out milk and eggs but am struggling to the moon and back with giving up cheese and my chocolate... (sidenote: mmmm...) i think i lack self discipline or self patience needed. are there others out there that struggle with this? anyone over come this?
Here's a treat that's easy and quick, and also great for movie night!
This is Phillip's recipe at Lovingraw:
Green Popcorn - A Lovingraw Original
Ingredients:
Cauliflower (1 whole chopped in popcorn size pieces)
Nutritional Yeast (a whole lot, just pour it in, maybe 4-8 heaping teaspoons)
Sea Salt (1 teaspoon or more)
Black Pepper (just shake it on)
Spirulina (make it green, 3 tablespoons, 5 if your hard core)
Olive Oil (2 teaspoons)
Water (just a splash)
How To:
Put it all in a gallon size zip lock bag and shake until your arms hurt. You can make it cheesier by adding more yeast, greener by adding more spirulina, and sticky by adding raw honey (only do that if you are going to dehydrate).
You can eat it as-is, which I usually do, or you can dehydrate it overnight and it will shrink up into yummy little crunchy pieces.

You definitely don't have to give up chocolate to be vegan. Endangered Species Chocolates makes yummy dark chocolate that is vegan and gluten free. So Delicious also makes wonderful tasting soy based "ice creams" and "yogurt". The dark chocolate "ice cream" is my favorite when I really need that chocolate fix. It's so creamy you don't miss dairy at all. I have provided some links below. For cheese, there are many soy based alternatives but cashew parmesan is my favorite. It's so easy to make, you just combine equal parts raw cashews, nutrional yeast and 1/4 tsp salt in a food processor. Goes great on veggie pizza or sandwiches.
