Seaweed is sooo healthy and it's full of minerals! I kinda made this recipe up and it turned out pretty well. Let me know what you think and add stuff!
Instead of rice or grain (which is fine too) I make raw veggie rice with either jicama OR parsnip and pine nuts. I throw everything in the food processor and voila. Sorry, I never measure, just taste and add accordingly.
Other thinly sliced filling to use for rolls:
cukes
carrot
ginger slices
avocado
sprouts
scallions
Once you roll your veggie sushi dip in them in either nama shoyu or braggs - add some wasabi!
Sushi rolling tutorial:
If you've never rolled your own sushi don't be overwhelmed, it's wicked easy. You need will need a bambo sushi mat which you can purchase at any asian store or perhaps the health food store.
You place the nori sushi on the mat with the rough side up, shiny side down. If you use rice (or quinoa, millet, raw veggie rice recipe etc) gently spread about a 1/2 cup on the bottom half of the sushi. Place any thinly sliced veggies in a line in the middle of your grain. Fold the bottom of the bamboo mat up and over the filing and roll the nori tightly.
Slightly wet the top edge of the nori to seal it. Let it sit in the mat for a minute or so to set. Unwrap bamboo mat and dip your knife in water to cut the rolls - this trick helps to keep the sushi in tact. Clean your knife if it gets gunky between cuts.
