Where ya been? Wanted to give you a cheese update. I tried, tried, tried my best ......I bought vegan cheese made of tofu that was supposed to taste like cheddar. I have to tell you ....I found it might odious. I kinda felt sick trying to eat it so I gave up and had to chuck it. And I do eat tofu and tempeh but this was just not right. Meantime....I have been bad.....putting blue cheese and feta cheese in my summer salads. What about you?

Went to whole foods today...the cheese guy was plyyyying me with different scrumptious cheese samples (yes I was bad) ...but I still went and bought some thing called vegan cheese. It comes in a monterey jack and cheddar flavor and seems to have tofu and yeast in it. I will let you know the verdict.
Meantime, I did see Almond cheese there ...but when I checked the ingredients it said it had milk casein in ti which sort of defeats the purpose right? Not strictly vegan. But the good news is it seems you might be able to make your own "cheese" with an almond base and some other ingredients.
The tough thing for me is that most of these "vegan" cheeses (there was rice cheese too) seem to come in 3 basic flavors....cheddar, mozzerella, monterey jack. I love complex cheeses .....brie, blue, manchengo, goudas, jarlsberg......especially in the summer with some fresh fruit and a little wine. Is there anything that can really take the place of that for me?
I have never eaten alot of processed junk foods ...my weakness have always been cheese, pasta, bread (whole grain always though), and maybe desserts (love anything made from scratch with cheese or chocolate). I can get over dessert better than the cheese though!
It doesn't help when the guy at whole foods is feeding me samples of fresh ricotta with warm fresh granola drizzled with honey or aged cheddar with watermelon on a toasty cracker. Yikes.
Well, I hope my escapade to WF gave you a little helpful info on the vegan cheese issue. I definitely think this is going to be a long process for me. :)
you know I never have tried the soy yogurt. I have had soy everything else due to my lactose issues (which doesn't seem to include hard cheese.....lucky me :))....I was always more concerned with milk and ice cream substitutes rather than yogurt. Plus I was always bigger on cottage cheese (esp with fruit) for some reason. Now how do you replace that!!?
That is a bummer for you about the nuts since it seems the nuts are used in the vegan cheese making. I haven't seen if you could do it with almonds. If find something I will definitely let you know. Have you tried any of those rice cheeses in the health store?
It's ok for processed cheese but I haven't seen anything that compares to having something like feta or blue.
The thing is you could let yourself slightly off the hook given your nut issues and do the more "raw" thing vs. the "vegan" thing. Like Bav had mentioned...any raw milk goat cheese like the Alta Denta are a good compromise. I haven't tried this yet but am going to look for it next time I go shopping.

was wondering if you would like to be "cheesy" friends? Would love to share experiences and any finds or recipes to try to get off the cheese wagon.:)
I am going to go slow as bav had mentioned....try to reduce down to just maybe the organic raw goat cheese and occasional raw blue/organic cheese. These are more expensive so that will be a further impetus to limit the amount I consume. While doing that....I will try out my hand at a nut cheese.hee.
